I had a hard time cooking dinner when it was just Walker and I, but sometimes with a toddler it seems nearly impossible. I definitely go through phases where I’m really good at getting a healthy dinner on the table for all three of us, and then there are times when a rotisserie chicken or jarred pasta is a good as it’s going to get. Lucky for my family, right now I’ve been on big cooking kick, and I wanted to share some our favorite recipes lately + the meal planning app that’s been a total game changer.
First, let’s talk about the app, MealBoard. I’ve never been a very organized person, and if I actually made a grocery last I rarely made it out the door with it. MealBoard is great because it combines meal planning, grocery list, and pantry management all in one. The app has a handful of healthy recipes on it, but you can also upload any recipe you want from the web. You then add the recipe to your calendar, and from there it creates a grocery list. Viola! So simple, and it makes meal meal planning and grocery shopping a breeze.
Now, here are the recipes that have been a hit across the board (even toddler approved).
Zoodle Shrimp Scampi (pictured)- this was my first experience with zoodles, and man was it delicious. One tip: stick to the recipe. It seems like you are under seasoning it because the recipe is so light, but it comes out so flavorful and delicious. My husband loved it so much, he requested it be on the weekly rotation
Cauliflower Fritters – these are great as as a side or by themselves for a snack. LJ especially loves them, and they are equally yummy with broccoli.
